Lemon Cornmeal Tea Cakes
Ingredients
- 1 cup cornmeal
- 4 tablespoons Crisco
- 2 eggs
- 1 1/2 cups sour milk
- 2 cups flour
- 3/4 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon lemon extract
Method
- 1 Beat eggs, then mix in cornmeal and sour milk.
- 2 Sift together flour, sugar, baking soda, and salt; add to egg mixture.
- 3 Stir in lemon extract and melted Crisco; beat for two minutes.
- 4 Divide batter into greased and floured gem pans.
- 5 Bake in a 350°F oven for 15 minutes.
