Lemon Cornmeal Tea Cakes

  • 1 cup cornmeal
  • 4 tablespoons Crisco
  • 2 eggs
  • 1 1/2 cups sour milk
  • 2 cups flour
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon lemon extract

Method

  1. 1 Beat eggs, then mix in cornmeal and sour milk.
  2. 2 Sift together flour, sugar, baking soda, and salt; add to egg mixture.
  3. 3 Stir in lemon extract and melted Crisco; beat for two minutes.
