Lemon Cornmeal Shortbread Cookies

Ingredients

  • 1 lb powdered sugar
  • 1 lb butter
  • ½ lb wheat flour
  • ½ lb cornmeal
  • Juice and grated peel of 1 large lemon
  • Spice to taste
  • Sugar for garnish

Method

  1. 1 Mix powdered sugar, butter, wheat flour, and cornmeal. Add lemon juice, grated peel, and spice.
  2. 2 Form mixture into a paste lump. Beat it hard in a mortar on all sides.
  3. 3 Roll out thin and cut into cakes using a tumbler or tin cutter.
  4. 4 Place cakes in a floured shallow pan, spaced apart. Bake for 10 minutes.
  5. 5 Remove from oven and grate sugar over the top while warm.
