Lemon Cornmeal Shortbread Cookies
Ingredients
- 1 lb powdered sugar
- 1 lb butter
- ½ lb wheat flour
- ½ lb cornmeal
- Juice and grated peel of 1 large lemon
- Spice to taste
- Sugar for garnish
Method
- 1 Mix powdered sugar, butter, wheat flour, and cornmeal. Add lemon juice, grated peel, and spice.
- 2 Form mixture into a paste lump. Beat it hard in a mortar on all sides.
- 3 Roll out thin and cut into cakes using a tumbler or tin cutter.
- 4 Place cakes in a floured shallow pan, spaced apart. Bake for 10 minutes.
- 5 Remove from oven and grate sugar over the top while warm.
