Lemon Corn Pudding Pie
Ingredients
- 2 lbs corn mush (moderately warm)
- ¾ lb butter
- 6 egg yolks
- Rind of 1 lemon
- Juice of 2 lemons
- Sugar to taste
- Nutmeg to taste
- Pie crust (for baking)
Method
- 1 Preheat oven to 350°F (moderate oven).
- 2 In a large bowl, combine the warm corn mush and butter until well mixed.
- 3 Stir in the egg yolks, lemon rind, and lemon juice.
- 4 Add sugar and nutmeg to taste, mixing thoroughly.
- 5 Pour the mixture into a prepared pie crust.
- 6 Bake at 350°F until the filling is set and the crust is golden brown.
