Lemon Coconut Layer Cake
Ingredients
- 4 egg whites
- ¾ cup butter
- ¾ cup sugar
- ¾ cup sweet milk
- 2 cups flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- Lemon extract for flavoring
- 3 egg whites (for icing)
- Sufficient sugar and liquid for icing consistency
- Shredded coconut for sprinkling
Method
- 1 Beat egg whites until foamy, then add butter, sugar, and milk. Mix well.
- 2 Sift flour with cream of tartar and soda. Add to wet ingredients and stir in lemon flavoring.
- 3 Pour batter into jelly cake pans and bake until done.
- 4 Prepare icing using 3 egg whites, ensuring it is slightly softer than standard frosting.
- 5 Spread icing between cake layers, stack, and sprinkle the top thickly with coconut.
