Lemon Coconut Drop Cookies

Ingredients

  • 1 cup butter
  • 4 eggs, separated
  • 1 lemon, juiced and zested
  • 4 cups sugar
  • 4 teaspoons baking powder
  • Flour, enough to make a stiff batter
  • 1 pound package grated coconut

Method

  1. 1 Cream sugar with butter. Add egg yolks and beat well.
  2. 2 Stir in lemon juice and rind.
  3. 3 Sift flour and baking powder twice, then add to mixture along with coconut. Mix until very stiff.
  4. 4 Fold in egg whites beaten to stiff peaks.
  5. 5 Drop batter onto buttered baking sheets.
  6. 6 Bake in a moderate oven (350°F) until set.
