Lemon Coconut Drop Cookies
Ingredients
- 1 cup butter
- 4 eggs, separated
- 1 lemon, juiced and zested
- 4 cups sugar
- 4 teaspoons baking powder
- Flour, enough to make a stiff batter
- 1 pound package grated coconut
Method
- 1 Cream sugar with butter. Add egg yolks and beat well.
- 2 Stir in lemon juice and rind.
- 3 Sift flour and baking powder twice, then add to mixture along with coconut. Mix until very stiff.
- 4 Fold in egg whites beaten to stiff peaks.
- 5 Drop batter onto buttered baking sheets.
- 6 Bake in a moderate oven (350°F) until set.
