Lemon Citrus Taffy
Ingredients
- 2 lbs granulated sugar
- 1 oz candied orange peel, chopped
- 1 oz citron, chopped
- Juice of 3 lemons
- Zest of 2 lemons
- 2.5 oz unsalted butter
Method
- 1 Combine sugar, candied orange peel, citron, lemon juice, lemon zest, and butter in a heavy-bottomed saucepan.
- 2 Cook over medium heat, stirring constantly to prevent burning, until the mixture reaches a soft-ball consistency (approx. 240°F).
- 3 Pour the hot taffy onto a sheet of parchment paper lightly greased with butter to prevent sticking.
- 4 Allow to cool completely before breaking into pieces.
