Lemon Citrus Taffy

Ingredients

  • 2 lbs granulated sugar
  • 1 oz candied orange peel, chopped
  • 1 oz citron, chopped
  • Juice of 3 lemons
  • Zest of 2 lemons
  • 2.5 oz unsalted butter

Method

  1. 1 Combine sugar, candied orange peel, citron, lemon juice, lemon zest, and butter in a heavy-bottomed saucepan.
  2. 2 Cook over medium heat, stirring constantly to prevent burning, until the mixture reaches a soft-ball consistency (approx. 240°F).
  3. 3 Pour the hot taffy onto a sheet of parchment paper lightly greased with butter to prevent sticking.
  4. 4 Allow to cool completely before breaking into pieces.
