Lemon Cinnamon Nut Coffee Cake

Ingredients

• 1 tablespoon butter
• 1 cup sugar
• 1 egg
• 1 cup milk
• 1 1/2 cups flour
• 1 heaping teaspoon baking powder
• Juice and grated rind of 1/2 lemon
• Chopped nuts
• Sugar
• Cinnamon
• Butter

Method

1. 1 Mix butter, sugar, egg, milk, flour, baking powder, and lemon juice and rind thoroughly.
2. 2 Spread the dough into a shallow buttered baking pan.
3. 3 Sprinkle with chopped nuts, sugar, cinnamon, and dots of butter.
4. 4 Bake until brown and crisp.
5. 5 Cut into squares and serve piping hot.
