Lemon Candied Peel Soda Cakes

Ingredients

  • 1 lb flour
  • 2 oz butter
  • 3 oz sugar
  • 1 oz candied peel
  • Grated rind of 1 lemon
  • 1 whole egg
  • Milk, as needed
  • ½ teaspoon baking soda

Method

  1. 1 Rub the butter into the flour until well combined.
  2. 2 Add the sugar, candied peel, lemon rind, and baking soda; mix well.
  3. 3 Mix in the beaten egg and a little milk if necessary to form a very stiff dough.
  4. 4 Place the mixture in small rough heaps on a greased baking sheet.
  5. 5 Bake in a 425°F oven for 15 minutes.
