Lemon Candied Peel Soda Cakes
Ingredients
- 1 lb flour
- 2 oz butter
- 3 oz sugar
- 1 oz candied peel
- Grated rind of 1 lemon
- 1 whole egg
- Milk, as needed
- ½ teaspoon baking soda
Method
- 1 Rub the butter into the flour until well combined.
- 2 Add the sugar, candied peel, lemon rind, and baking soda; mix well.
- 3 Mix in the beaten egg and a little milk if necessary to form a very stiff dough.
- 4 Place the mixture in small rough heaps on a greased baking sheet.
- 5 Bake in a 425°F oven for 15 minutes.
