Lemon Butter Roasted Spring Lamb

Ingredients

  • 1 spring lamb fore or hind quarter
  • 2 tbsp butter
  • 1 lemon, juiced
  • 1 tsp salt
  • ½ tsp pepper
  • Mint sauce
  • Green peas or asparagus tips

Method

  1. 1 Preheat oven to 425°F. Place lamb in a roasting pan with a little water.
  2. 2 Roast for 15-18 minutes per pound, basting frequently until thoroughly cooked.
  3. 3 While roasting, prepare dressing: mix butter, lemon juice, salt, and pepper.
  4. 4 Remove lamb from oven. Place dressing under the shoulder bone and let stand 1 minute.
  5. 5 Carve into squares and serve with mint sauce and green peas or asparagus.
