Lemon Butter Roasted Spring Lamb
Ingredients
- 1 spring lamb fore or hind quarter
- 2 tbsp butter
- 1 lemon, juiced
- 1 tsp salt
- ½ tsp pepper
- Mint sauce
- Green peas or asparagus tips
Method
- 1 Preheat oven to 425°F. Place lamb in a roasting pan with a little water.
- 2 Roast for 15-18 minutes per pound, basting frequently until thoroughly cooked.
- 3 While roasting, prepare dressing: mix butter, lemon juice, salt, and pepper.
- 4 Remove lamb from oven. Place dressing under the shoulder bone and let stand 1 minute.
- 5 Carve into squares and serve with mint sauce and green peas or asparagus.
