Lemon Butter Mushrooms On Toast

Ingredients

  • 2 tbsp butter
  • Juice of 1/2 lemon
  • 1 lb small mushrooms, cleaned
  • Salt and pepper to taste
  • 1 tbsp flour
  • 1/2 cup gravy
  • 1 egg yolk
  • 4 slices bread, toasted and buttered

Method

  1. 1 Melt butter in a pan and add lemon juice. Add mushrooms and stir constantly until heated through, about 3-4 minutes.
  2. 2 Boil the mushrooms for a few minutes, then drain. Sprinkle with flour and moisten with gravy.
  3. 3 Return mushrooms to the pan with remaining butter. Stir in egg yolk and remaining lemon juice. Season with salt and pepper.
  4. 4 Pour the mushroom mixture over toasted, buttered bread and serve immediately while very hot.
