Lemon Butter Mushrooms On Toast
Ingredients
- 2 tbsp butter
- Juice of 1/2 lemon
- 1 lb small mushrooms, cleaned
- Salt and pepper to taste
- 1 tbsp flour
- 1/2 cup gravy
- 1 egg yolk
- 4 slices bread, toasted and buttered
Method
- 1 Melt butter in a pan and add lemon juice. Add mushrooms and stir constantly until heated through, about 3-4 minutes.
- 2 Boil the mushrooms for a few minutes, then drain. Sprinkle with flour and moisten with gravy.
- 3 Return mushrooms to the pan with remaining butter. Stir in egg yolk and remaining lemon juice. Season with salt and pepper.
- 4 Pour the mushroom mixture over toasted, buttered bread and serve immediately while very hot.
