Lemon Bread Pudding With Meringue

Ingredients

  • 1 quart milk
  • 1 ½ cups bread crumbs
  • 1 cup white sugar
  • ½ cup butter
  • 4 eggs
  • Juice and ½ teaspoon grated rind of 1 lemon
  • 3 tablespoons powdered sugar

Method

  1. 1 Soak bread crumbs in milk.
  2. 2 Add beaten egg yolks, butter, and 1 cup sugar; rub to a cream.
  3. 3 Mix in lemon juice and grated rind.
  4. 4 Pour into a buttered dish and bake until firm and slightly browned.
  5. 5 Beat egg whites to stiff peaks with 3 tablespoons powdered sugar and lemon flavoring.
  6. 6 Spread meringue over the baked pudding and brown slightly.
  7. 7 Sift sugar over top and serve cold.
