Lemon Bread Pudding With Meringue
Ingredients
- 1 quart milk
- 1 ½ cups bread crumbs
- 1 cup white sugar
- ½ cup butter
- 4 eggs
- Juice and ½ teaspoon grated rind of 1 lemon
- 3 tablespoons powdered sugar
Method
- 1 Soak bread crumbs in milk.
- 2 Add beaten egg yolks, butter, and 1 cup sugar; rub to a cream.
- 3 Mix in lemon juice and grated rind.
- 4 Pour into a buttered dish and bake until firm and slightly browned.
- 5 Beat egg whites to stiff peaks with 3 tablespoons powdered sugar and lemon flavoring.
- 6 Spread meringue over the baked pudding and brown slightly.
- 7 Sift sugar over top and serve cold.
