Lemon Baked Custard Pudding

Ingredients

  • 1 cup sugar
  • 1/2 cup cold butter
  • 1 pint milk
  • 2 cups sifted flour
  • 3 eggs
  • grated lemon rind

Method

  1. 1 Heat the milk, stir in the butter, and let it cool.
  2. 2 Whisk the sugar, flour, and eggs (omitting whites of two) into the milk mixture. Add lemon rind and beat well.
  3. 3 Butter small cups, fill them more than halfway, and bake at 350°F for 20-30 minutes.
  4. 4 Serve warm with fruit, custard, or wine sauce.
