Lemon Arrowroot Sauce

Ingredients

  • 1 tsp arrowroot
  • Juice of ½ lemon
  • Zest of ½ lemon
  • 2 tbsp granulated sugar
  • ½ cup water
  • 1 tbsp cold water (for slurry)
  • 1 tbsp sherry (optional)

Method

  1. 1 In a saucepan, combine water, lemon zest, and sugar. Bring to a boil.
  2. 2 In a small bowl, whisk arrowroot with 1 tbsp cold water until smooth.
  3. 3 Pour the boiling water mixture into the arrowroot slurry. Stir constantly until thickened.
  4. 4 Remove from heat, strain, and stir in lemon juice. Add sherry if desired.
