Lemon Apple Mincemeat With Candied Peel

Ingredients

  • 1/2 cup Crisco
  • 2 large lemons
  • 4 apples
  • 1/4 lb chopped candied lemon peel
  • 1 lb currants
  • 1 3/4 cups sugar
  • 1 tsp powdered cinnamon
  • 1 tsp powdered ginger
  • 1/2 tsp grated nutmeg
  • 1/2 tsp powdered allspice
  • 1/4 tsp powdered cloves
  • 1 tsp salt
  • 1/2 cup seeded raisins
  • 1/2 cup chopped nut meats

Method

  1. 1 Extract juice from lemons and remove seeds.
  2. 2 Boil lemons in cold water until tender, changing water at least twice, then drain.
  3. 3 Pound the boiled lemon peel into a paste.
  4. 4 Core, peel, and chop the apples.
  5. 5 Combine apple, lemon peel paste, Crisco, currants, raisins, salt, spices, lemon juice, nut meats, and sugar in a jar.
  6. 6 Cover the jar and store.
