Lemon Apple Mincemeat With Candied Peel
Ingredients
- 1/2 cup Crisco
- 2 large lemons
- 4 apples
- 1/4 lb chopped candied lemon peel
- 1 lb currants
- 1 3/4 cups sugar
- 1 tsp powdered cinnamon
- 1 tsp powdered ginger
- 1/2 tsp grated nutmeg
- 1/2 tsp powdered allspice
- 1/4 tsp powdered cloves
- 1 tsp salt
- 1/2 cup seeded raisins
- 1/2 cup chopped nut meats
Method
- 1 Extract juice from lemons and remove seeds.
- 2 Boil lemons in cold water until tender, changing water at least twice, then drain.
- 3 Pound the boiled lemon peel into a paste.
- 4 Core, peel, and chop the apples.
- 5 Combine apple, lemon peel paste, Crisco, currants, raisins, salt, spices, lemon juice, nut meats, and sugar in a jar.
- 6 Cover the jar and store.
