Lemon Apple Cake With Apricot Glaze

  • 3/4 cup butter
  • 3/4 cup sugar
  • 3 eggs
  • 1 3/4 cups flour (sifted)
  • 2 teaspoons baking powder
  • 1 tablespoon grated lemon rind
  • 2 medium apples, pared, cored, sliced
  • 2 teaspoons sugar
  • 1/2 cup apricot jam

Method

  1. 1 Beat butter with 3/4 cup sugar until creamy.
