Lemon Angel Cake
Ingredients
- 4 1/2 oz sugar
- 3 oz flour
- 1 oz butter
- 4 egg yolks
- 3 egg whites
- 1 pinch baking soda
- 1 tsp lemon peel
Method
- 1 Beat egg yolks with sugar until whitish. Stir in dried flour for 15 minutes.
- 2 Mix in softened butter. Fold in well-beaten egg whites.
- 3 Spread batter into greased, floured molds or a tin, no more than 1/2 inch thick.
- 4 Bake until set. Cut into diamonds and dust with powdered sugar.
