Lemon Angel Cake

Ingredients

  • 4 1/2 oz sugar
  • 3 oz flour
  • 1 oz butter
  • 4 egg yolks
  • 3 egg whites
  • 1 pinch baking soda
  • 1 tsp lemon peel

Method

  1. 1 Beat egg yolks with sugar until whitish. Stir in dried flour for 15 minutes.
  2. 2 Mix in softened butter. Fold in well-beaten egg whites.
  3. 3 Spread batter into greased, floured molds or a tin, no more than 1/2 inch thick.
  4. 4 Bake until set. Cut into diamonds and dust with powdered sugar.
