Lemon Almond Shortbread Cookies

Ingredients

  • 1/2 lb sweet almonds
  • 6 eggs
  • 1 lb powdered sugar
  • 1 lb butter
  • 2 lemon rinds, grated
  • 1 lb flour
  • 1 egg yolk
  • powdered sugar or cinnamon for topping

Method

  1. 1 Blanch and pound 1/2 lb sweet almonds into a fine paste.
  2. 2 Beat in 6 eggs, then add 1 lb powdered sugar, 1 lb butter, and grated rind of 2 lemons; mix thoroughly.
  3. 3 Place 1 lb flour on a surface, add the almond paste, and knead until well incorporated.
  4. 4 Roll out the dough and cut into desired shapes.
  5. 5 Rub with egg yolk and sprinkle with powdered sugar or cinnamon.
  6. 6 Bake on a buttered tin in a moderate oven (350°F) until done, taking care not to burn.
