Lemon Almond Shortbread Cookies
Ingredients
- 1/2 lb sweet almonds
- 6 eggs
- 1 lb powdered sugar
- 1 lb butter
- 2 lemon rinds, grated
- 1 lb flour
- 1 egg yolk
- powdered sugar or cinnamon for topping
Method
- 1 Blanch and pound 1/2 lb sweet almonds into a fine paste.
- 2 Beat in 6 eggs, then add 1 lb powdered sugar, 1 lb butter, and grated rind of 2 lemons; mix thoroughly.
- 3 Place 1 lb flour on a surface, add the almond paste, and knead until well incorporated.
- 4 Roll out the dough and cut into desired shapes.
- 5 Rub with egg yolk and sprinkle with powdered sugar or cinnamon.
- 6 Bake on a buttered tin in a moderate oven (350°F) until done, taking care not to burn.
