Lemon Almond Ladyfinger Cookies

Ingredients

  • 9 oz granulated sugar
  • 5 oz very fine Hungarian flour
  • 2 oz sweet almonds (with some bitter)
  • 6 whole eggs
  • 3 egg yolks
  • Grated lemon peel

Method

  1. 1 Skin almonds in warm water, dry, then grind or pound with 1 tbsp sugar. Mix with flour.
  2. 2 In a deep dish, stir remaining sugar, egg yolks, and lemon peel with a ladle for 15 minutes.
  3. 3 Beat egg whites until thick. Gently fold into the almond-flour mixture.
  4. 4 Pour into a butter-greased baking tin sprinkled with powdered sugar and flour. Bake.
