Lemon Almond Ladyfinger Cookies
Ingredients
- 9 oz granulated sugar
- 5 oz very fine Hungarian flour
- 2 oz sweet almonds (with some bitter)
- 6 whole eggs
- 3 egg yolks
- Grated lemon peel
Method
- 1 Skin almonds in warm water, dry, then grind or pound with 1 tbsp sugar. Mix with flour.
- 2 In a deep dish, stir remaining sugar, egg yolks, and lemon peel with a ladle for 15 minutes.
- 3 Beat egg whites until thick. Gently fold into the almond-flour mixture.
- 4 Pour into a butter-greased baking tin sprinkled with powdered sugar and flour. Bake.
