Lemon Almond Fruit Coffee Cake
Ingredients
- 1 cake compressed yeast
- 2 tbsp tepid water
- 1 pinch salt
- 1 tbsp sugar
- 1 cup butter
- 3/4 cup powdered sugar
- 6 egg yolks
- 1 lemon, grated yellow rind only
- 2 cups flour
- 1 cup scalded and cooled milk
- 1 handful sultanas
- 1/2 cup blanched and shredded almonds
- 1/2 cup shredded citron
- 6 egg whites
- butter for pan
- sugar and spice for topping
Method
- 1 Dissolve yeast in tepid water with salt and sugar.
- 2 Cream butter and sugar, then beat in egg yolks one at a time with lemon rind.
- 3 Sift flour, make a thin batter with yeast mixture and milk, then add egg mixture.
- 4 Beat dough until it leaves sides of bowl, then fold in sultanas, almonds, citron, and stiffly beaten egg whites.
- 5 Pour into a buttered tube pan, let rise in a warm place, then bake very slowly.
- 6 When risen and browning, rub with softened butter and sprinkle with sugar and spice.
