Ingredients

  • 4 oz blanched almonds
  • 2 tbsp heavy cream
  • 8 oz sugar
  • 8 egg yolks
  • 8 oz butter
  • 2 lemon peels, grated

Method

  1. 1 Blanch and finely beat almonds with a little heavy cream in a mortar.
  2. 2 Add sugar, egg yolks, butter, and grated lemon peel; beat until smooth.
  3. 3 Line a dish with puff pastry and pour in the filling.
  4. 4 Bake at 350°F for 30 minutes until set.
