Lemon Almond Cream Tart
Ingredients
- 4 oz blanched almonds
- 2 tbsp heavy cream
- 8 oz sugar
- 8 egg yolks
- 8 oz butter
- 2 lemon peels, grated
Method
- 1 Blanch and finely beat almonds with a little heavy cream in a mortar.
- 2 Add sugar, egg yolks, butter, and grated lemon peel; beat until smooth.
- 3 Line a dish with puff pastry and pour in the filling.
- 4 Bake at 350°F for 30 minutes until set.
