Lemon Almond Cake

Ingredients

  • 1 cup sugar
  • ½ cup butter
  • 4 eggs
  • 1 tablespoon milk (if needed)
  • ¼ pound almond nuts, chopped fine
  • 2 ounces lemon peel
  • 2 teaspoons baking powder
  • 1 cup flour

Method

  1. 1 Whip butter and sugar together until creamy.
  2. 2 Add eggs one at a time, mixing well after each addition.
  3. 3 Stir in milk if needed, then fold in chopped almonds and lemon peel.
  4. 4 Sift in baking powder and flour, mixing until just combined.
  5. 5 Pour into a prepared pan and bake in a moderate oven (350°F) until done.
