Leeks Liegeoise With Hard Boiled Eggs
Ingredients
- leeks
- salt
- water
- hard-boiled eggs
- melted butter
- mayonnaise sauce
Method
- 1 Trim leeks, removing green tops and leaving only the blanched stalk. If thick, cut lengthwise.
- 2 Boil leeks in salted water for about one hour until thoroughly cooked.
- 3 Drain leeks and arrange neatly on a serving dish.
- 4 Halve hard-boiled eggs and arrange them around the leeks.
- 5 Serve hot with melted butter or cold with mayonnaise sauce.
