Leeks Liegeoise With Hard Boiled Eggs

Ingredients

  • leeks
  • salt
  • water
  • hard-boiled eggs
  • melted butter
  • mayonnaise sauce

Method

  1. 1 Trim leeks, removing green tops and leaving only the blanched stalk. If thick, cut lengthwise.
  2. 2 Boil leeks in salted water for about one hour until thoroughly cooked.
  3. 3 Drain leeks and arrange neatly on a serving dish.
  4. 4 Halve hard-boiled eggs and arrange them around the leeks.
  5. 5 Serve hot with melted butter or cold with mayonnaise sauce.
