Layered Egg Salad With Tomato And Onions
Ingredients
- 1 handful finely shredded lettuce
- 2-3 young sliced onions
- 1 bunch mustard and cress
- 2 sliced tomatoes
- 2 hard-boiled eggs, sliced
- Salt and pepper to taste
- 1 cup grated cheese
- 1/3 cup heavy cream
- 1/3 cup salad oil
- 1/3 cup vinegar
- 1 tsp mustard
Method
- 1 Line a glass dish with finely shredded lettuce.
- 2 Layer sliced onions, mustard and cress, sliced tomatoes, and sliced hard-boiled eggs over the lettuce.
- 3 Season with salt and pepper, then top with a layer of grated cheese.
- 4 Whisk together cream, salad oil, vinegar, and mustard until smooth.
- 5 Serve the salad with the dressing on the side or drizzled over.
