Layered Cornmeal And Meat Casserole
Ingredients
- 2 cups cornmeal
- 5 cups boiling water
- 2 tablespoons fat
- 1 teaspoon salt
- 1 onion
- 2 cups tomatoes
- 2 cups cooked or raw meat, cut in small pieces
- ½ cup green peppers
Method
- 1 Combine cornmeal, 1 teaspoon salt, and boiling water. Cook for one-half hour.
- 2 Brown onion in fat, then add meat, remaining salt, 1/8 teaspoon cayenne, tomatoes, and green peppers.
- 3 Grease a baking dish. Layer cornmeal mush, meat mixture, and top with remaining mush.
- 4 Bake at 350°F for one-half hour.
