Layered Cornmeal And Meat Casserole

Ingredients

  • 2 cups cornmeal
  • 5 cups boiling water
  • 2 tablespoons fat
  • 1 teaspoon salt
  • 1 onion
  • 2 cups tomatoes
  • 2 cups cooked or raw meat, cut in small pieces
  • ½ cup green peppers

Method

  1. 1 Combine cornmeal, 1 teaspoon salt, and boiling water. Cook for one-half hour.
  2. 2 Brown onion in fat, then add meat, remaining salt, 1/8 teaspoon cayenne, tomatoes, and green peppers.
  3. 3 Grease a baking dish. Layer cornmeal mush, meat mixture, and top with remaining mush.
  4. 4 Bake at 350°F for one-half hour.
