Layered Clam Chowder With Crispy Pork Bits
Ingredients
- 1 quart clams
- 2 slices salt pork
- 1 large onion
- 6 medium potatoes
- 6 large crackers
- 2 cups hot milk
- Salt and pepper to taste
Method
- 1 Chop the clams fine. Fry the salt pork in an iron pot until the fat is rendered, then remove the crispy bits.
- 2 In the pork fat, sauté sliced onion, then layer in sliced potatoes and chopped clams. Season with salt and pepper.
- 3 Add a layer of sliced onion, the reserved fried pork bits, and broken crackers. Repeat layers until ingredients are used.
- 4 Pour in the clam liquor and enough water to cover. Cook for 20 minutes.
- 5 Stir in hot milk just before serving.
