Layered Clam Chowder With Crispy Pork Bits

Ingredients

  • 1 quart clams
  • 2 slices salt pork
  • 1 large onion
  • 6 medium potatoes
  • 6 large crackers
  • 2 cups hot milk
  • Salt and pepper to taste

Method

  1. 1 Chop the clams fine. Fry the salt pork in an iron pot until the fat is rendered, then remove the crispy bits.
  2. 2 In the pork fat, sauté sliced onion, then layer in sliced potatoes and chopped clams. Season with salt and pepper.
  3. 3 Add a layer of sliced onion, the reserved fried pork bits, and broken crackers. Repeat layers until ingredients are used.
  4. 4 Pour in the clam liquor and enough water to cover. Cook for 20 minutes.
  5. 5 Stir in hot milk just before serving.
