Layered Chocolate Fudge With Marshmallow Halves
Ingredients
- 4 cups granulated sugar
- 2 cups cream
- ½ teaspoon salt
- 2 tablespoons butter
- 4 squares Baker's Chocolate
- 2 teaspoons vanilla
- Nearly ½ pound marshmallows, split in halves
Method
- 1 Combine 2 cups sugar, 1 cup cream, ¼ tsp salt, 1 tbsp butter, 2 chocolate squares, and vanilla in a pan. Stir over low heat until sugar melts.
- 2 Attach a candy thermometer and cook over medium heat without stirring until the mixture reaches the soft-ball stage (236°F).
- 3 Remove from heat and place the pan on a cake cooler or spoon handles to allow air circulation. Let cool until nearly cold.
- 4 Add remaining vanilla and beat vigorously until the fudge begins to thicken. Spread half of the mixture into a pan lined with waxed paper.
- 5 Arrange marshmallow halves close together on top of the first layer of fudge.
- 6 Repeat the cooking process with the second batch of ingredients. Beat until thickened, then pour over the marshmallows.
- 7 Once the entire fudge is nearly cool, turn it onto a marble or hardwood board. Remove the paper and cut into cubes.
