Layered Apple Bread Pudding With Lemon

  • 2 cups tart cooking apples, chopped
  • 1 ½ cups stale bread crumbs
  • 4 heaping tablespoons sugar
  • 1 generous tablespoon butter
  • grated rind of 1 lemon
  • cream or hard sauce, for serving

Method

  1. 1 Butter a pudding dish.
  2. 2 Divide ingredients into four layers, starting with apples and ending with bread crumbs.
  3. 3 Sprinkle sugar and lemon rind over the apples, then cut butter into tiny lumps and scatter over the crumbs.
  4. 4 Bake in a moderate oven (350°F) for 45 minutes.
  5. 5 Serve with cream or hard sauce.
