Large Batch Sponge Cake With Citrus
Ingredients
- 12 large eggs, separated
- 12 large eggs weight in granulated sugar (approx. 6 cups)
- 6 large eggs weight in all-purpose flour (approx. 3 cups)
- Nutmeg or grated lemon peel to taste
Method
- 1 Preheat oven to 350°F. Grease several small cake pans.
- 2 Beat egg yolks with the sugar until pale and thick. Beat egg whites separately until stiff peaks form.
- 3 Fold the egg whites into the yolk mixture. Gently fold in the flour and nutmeg or lemon peel until just combined.
- 4 Pour batter into prepared pans. Bake for 30 minutes or less, depending on pan size, until golden and springy.
