Larded Roasted Turkey With Bacon
Ingredients
- 1 turkey, chicken, duck, or game bird
- Salt pork or bacon strips, for larding
- Flour, for dredging
- Salt and pepper, for seasoning
Method
- 1 Clean the bird. Lard the breast with strips of salt pork or bacon, securing with toothpicks if necessary.
- 2 Place the bird in a hot oven (425°F) to sear briefly. Then turn the bird onto its breast.
- 3 Roast for three-quarters of the total cooking time on its breast, basting every ten minutes and dredging occasionally with flour.
- 4 In the last quarter of the cooking time, season the bird with salt and pepper. Turn it onto its back to brown.
- 5 Finish cooking, basting every ten minutes until done. For old birds, steam before roasting to ensure tenderness.
