Larded Roasted Turkey With Bacon

Ingredients

  • 1 turkey, chicken, duck, or game bird
  • Salt pork or bacon strips, for larding
  • Flour, for dredging
  • Salt and pepper, for seasoning

Method

  1. 1 Clean the bird. Lard the breast with strips of salt pork or bacon, securing with toothpicks if necessary.
  2. 2 Place the bird in a hot oven (425°F) to sear briefly. Then turn the bird onto its breast.
  3. 3 Roast for three-quarters of the total cooking time on its breast, basting every ten minutes and dredging occasionally with flour.
  4. 4 In the last quarter of the cooking time, season the bird with salt and pepper. Turn it onto its back to brown.
  5. 5 Finish cooking, basting every ten minutes until done. For old birds, steam before roasting to ensure tenderness.
