Larded Beef Tenderloin With Mushrooms
Ingredients
- 1 beef tenderloin
- pork fat for larding
- 1 can mushrooms
- peas for serving
Method
- 1 Lard the beef tenderloin with strips of pork fat.
- 2 Place the beef and one can of mushrooms in the oven and cook for 20 minutes.
- 3 Remove the meat and slice it into 1.5-inch thick pieces.
- 4 Top each slice with mushrooms and gravy, then return to the oven for 5 minutes to heat through.
- 5 Arrange slices in a circle on a platter and fill the center with peas before serving.
