  • pork fat for larding
  • 1 can mushrooms
  • peas for serving

Method

  1. 1 Lard the beef tenderloin with strips of pork fat.
  2. 2 Place the beef and one can of mushrooms in the oven and cook for 20 minutes.
  3. 3 Remove the meat and slice it into 1.5-inch thick pieces.
  4. 4 Top each slice with mushrooms and gravy, then return to the oven for 5 minutes to heat through.
  5. 5 Arrange slices in a circle on a platter and fill the center with peas before serving.
