Larded Beef Stew With Potatoes

Ingredients

  • 2 lbs beef or veal, tender
  • Ham or bacon, cut into small pieces
  • 1 tbsp butter
  • 1 medium onion, cut in half
  • 3-4 ribs celery, cut into ½-inch pieces
  • 3-4 slices carrot
  • Salt and pepper to taste
  • 1 cup water
  • Potatoes, cut into pieces or kept whole

Method

  1. 1 Lard the meat with pieces of ham or bacon. Tie securely with kitchen string.
  2. 2 Place meat in a stewpan with butter, onion, celery, and carrot. Season with salt and pepper.
  3. 3 Brown the meat on all sides, turning often. Pour in 1 cup water.
  4. 4 Cover and cook on low heat until tender, basting occasionally to prevent drying.
  5. 5 Remove meat. Strain pan juices and pour over meat. Serve with browned potatoes.
