Larded Beef Stew With Potatoes
Ingredients
- 2 lbs beef or veal, tender
- Ham or bacon, cut into small pieces
- 1 tbsp butter
- 1 medium onion, cut in half
- 3-4 ribs celery, cut into ½-inch pieces
- 3-4 slices carrot
- Salt and pepper to taste
- 1 cup water
- Potatoes, cut into pieces or kept whole
Method
- 1 Lard the meat with pieces of ham or bacon. Tie securely with kitchen string.
- 2 Place meat in a stewpan with butter, onion, celery, and carrot. Season with salt and pepper.
- 3 Brown the meat on all sides, turning often. Pour in 1 cup water.
- 4 Cover and cook on low heat until tender, basting occasionally to prevent drying.
- 5 Remove meat. Strain pan juices and pour over meat. Serve with browned potatoes.
