Laminated Shortening Pie Crust

Ingredients

  • 2 cups flour
  • 8 tablespoons Crisco
  • 3/4 teaspoon salt
  • cold water

Method

  1. 1 Sift flour and salt together.
  2. 2 Cut half the Crisco into the flour with a knife until finely divided.
  3. 3 Finish blending with fingertips if needed.
  4. 4 Add cold water sparingly, mixing with a knife through dry ingredients.
  5. 5 Form dough by hand and roll to 1/4 inch thickness.
  6. 6 Spread one-third of remaining Crisco on two-thirds of the dough.
  7. 7 Fold the dough into three layers, folding the plain part over the Crisco.
  8. 8 Turn dough so folded edges are to the sides.
  9. 9 Roll out, spread, and fold again.
  10. 10 Repeat the rolling and folding process one more time.
  11. 11 Roll from center outward using light motions to avoid tough crust.
