Laminated Crisco Pastry

Ingredients

  • 1/2 cup Crisco
  • 2 cups flour
  • 1/2 teaspoon salt
  • cold water

Method

  1. 1 Mix salt with flour.
  2. 2 Divide Crisco into four equal parts.
  3. 3 Rub one part of Crisco into the flour mixture.
  4. 4 Mix with a little cold water to form a stiff paste.
  5. 5 Shape into an oblong strip about three times as long as it is broad.
  6. 6 Dot the surface with one quarter of the remaining Crisco in pea-sized dabs.
  7. 7 Lightly flour the surface and fold the paste into thirds (letter fold).
  8. 8 Turn the dough 90 degrees, press edges to seal air, and roll out again.
  9. 9 Repeat the dotting, folding, and rolling process with the remaining two parts of Crisco.
  10. 10 Roll to the required thickness for use.
