Laminated Butter Puff Pastry

Ingredients

  • 1 cup butter
  • 2 cups flour
  • ½ teaspoon salt
  • ¼ to ½ cup ice water

Method

  1. 1 Chill butter in ice water until smooth, pat into a square, wrap, and refrigerate.
  2. 2 Sift flour and salt. Make a well, add some ice water, and mix into a smooth dough. Wrap and chill for 15 minutes.
  3. 3 Roll dough into a square. Place chilled butter in center, fold dough over to encase completely.
  4. 4 Roll into a strip, fold into thirds (one turn). Repeat 6 times total, chilling between turns if dough softens.
  5. 5 Cut into shapes, chill 20-30 minutes. Bake in a very hot oven (425°F) on the bottom rack until risen and golden.
