  • 1 quart flour
  • 4 egg whites
  • 2 egg yolks
  • Cream (as needed to form stiff paste)
  • ¾ pound butter

Method

  1. 1 Mix flour, egg whites, and egg yolks with enough cream to form a stiff paste.
  2. 2 Roll out the paste on a surface.
  3. 3 Lay small bits of butter (equal in hardness to the paste) onto the rolled dough, distributing them in ten separate layers.
  4. 4 Roll and fold the dough always in one direction to create layers.
  5. 5 Use the finished pastry as desired for your recipe.
