Laminated Butter Pastry Dough
Ingredients
- 1 quart flour
- 4 egg whites
- 2 egg yolks
- Cream (as needed to form stiff paste)
- ¾ pound butter
Method
- 1 Mix flour, egg whites, and egg yolks with enough cream to form a stiff paste.
- 2 Roll out the paste on a surface.
- 3 Lay small bits of butter (equal in hardness to the paste) onto the rolled dough, distributing them in ten separate layers.
- 4 Roll and fold the dough always in one direction to create layers.
- 5 Use the finished pastry as desired for your recipe.
