Lamb Stew With Steamed Dumplings
Ingredients
- 1 lb lamb, cut into small squares
- Cold water
- 3 slices salt pork, diced and fried crisp
- 2 onions, sliced
- 2-3 potatoes, diced
- 2 cups flour
- 1 tsp baking powder
- Pinch of salt
- Milk, as needed for stiff batter
- Flour blended with cold milk for thickening
Method
- 1 Place lamb in a pot, cover with cold water, and bring to a boil. Reduce heat and simmer slowly until nearly tender.
- 2 Add the fried salt pork, sliced onions, and diced potatoes. Cover and continue cooking until the meat and vegetables are fully tender.
- 3 Sift flour, baking powder, and salt together. Mix in enough milk to form a very stiff batter.
- 4 Drop spoonfuls of batter into buttered patty pans. Steam over boiling water until cooked through.
- 5 Whisk flour and cold milk into the stew gravy to thicken. Serve stew with steamed dumplings.
