Lamb Stew With Hand Cut Noodles
Ingredients
- 3 pounds lean lamb or mutton, cut into squares
- 1 cup salt pork, diced
- 2 cups flour
- 1 pinch salt
- 1 heaping teaspoon baking powder
- Milk, as needed
- Salt and pepper to taste
- Kitchen Bouquet to taste
Method
- 1 Place lamb in a pot, cover with cold water, and bring to a boil. Simmer for one hour.
- 2 Add diced salt pork and fry until crisp. Continue stewing for another 30 minutes.
- 3 Season the stew with salt, pepper, and Kitchen Bouquet.
- 4 Sift together flour, salt, and baking powder. Add milk to form a soft dough.
- 5 Roll out the dough, cut into small strips, and drop them into the stew.
- 6 Cover and cook for 10 minutes. Serve very hot.
