Lamb Stew With Hand Cut Noodles

Ingredients

  • 3 pounds lean lamb or mutton, cut into squares
  • 1 cup salt pork, diced
  • 2 cups flour
  • 1 pinch salt
  • 1 heaping teaspoon baking powder
  • Milk, as needed
  • Salt and pepper to taste
  • Kitchen Bouquet to taste

Method

  1. 1 Place lamb in a pot, cover with cold water, and bring to a boil. Simmer for one hour.
  2. 2 Add diced salt pork and fry until crisp. Continue stewing for another 30 minutes.
  3. 3 Season the stew with salt, pepper, and Kitchen Bouquet.
  4. 4 Sift together flour, salt, and baking powder. Add milk to form a soft dough.
  5. 5 Roll out the dough, cut into small strips, and drop them into the stew.
  6. 6 Cover and cook for 10 minutes. Serve very hot.
