Lamb Fillets With Maraschino Cherry Sauce
Ingredients
- Lamb fillet from the loin, sliced or cut into rounds
- Butter
- Salt and pepper
- 1/2 cup maraschino cherries
- 1/2 cup liquid from the maraschino cherry bottle
- Optional: 1/2 cup candied cherries soaked in 1/2 cup boiling water
- Optional: 1/2 cup sherry wine
Method
- 1 Season lamb fillet slices with salt and pepper.
- 2 Sauté the lamb in hot butter in a skillet until cooked to preference.
- 3 Add 1/2 cup maraschino cherries and 1/2 cup of their liquid to the pan.
- 4 Simmer briefly to create the sauce, then serve over the lamb.
