Lamb Fillets With Maraschino Cherry Sauce

Ingredients

  • Lamb fillet from the loin, sliced or cut into rounds
  • Butter
  • Salt and pepper
  • 1/2 cup maraschino cherries
  • 1/2 cup liquid from the maraschino cherry bottle
  • Optional: 1/2 cup candied cherries soaked in 1/2 cup boiling water
  • Optional: 1/2 cup sherry wine

Method

  1. 1 Season lamb fillet slices with salt and pepper.
  2. 2 Sauté the lamb in hot butter in a skillet until cooked to preference.
  3. 3 Add 1/2 cup maraschino cherries and 1/2 cup of their liquid to the pan.
  4. 4 Simmer briefly to create the sauce, then serve over the lamb.
