Lamb And Pea Salad With Mayonnaise
Ingredients
- cold boiled lamb, diced
- freshly cooked or canned green peas, half the quantity of lamb
- half can mushrooms, chopped fine
- salt
- pepper
- lemon juice
- mayonnaise dressing
- lettuce leaves
- fresh mint sprigs
- capers
Method
- 1 Dice cold boiled lamb and mix with half the quantity of green peas and chopped mushrooms.
- 2 Season with salt, pepper, and lemon juice, then mix thoroughly with mayonnaise dressing.
- 3 Serve on lettuce leaves, garnishing with mint sprigs and sprinkling capers over the top.
