Kumquat Preserves

Ingredients

  • 1 quart kumquats
  • 1 pint sugar
  • 3 pints water
  • ¼ teaspoon fine salt

Method

  1. 1 Cut kumquats in half, remove seeds, and cover with cold water. Add salt and bring to a boil.
  2. 2 Prepare syrup by boiling 1 pint sugar with 3 pints water.
  3. 3 Drain fruit and add to the boiling syrup. Simmer slowly for 1 hour.
  4. 4 Remove fruit. Continue simmering syrup until it thickens to desired consistency.
  5. 5 Return fruit to syrup. Place kettle in a pot of boiling water and boil until syrup is thick.
