Kumquat Preserves
Ingredients
- 1 quart kumquats
- 1 pint sugar
- 3 pints water
- ¼ teaspoon fine salt
Method
- 1 Cut kumquats in half, remove seeds, and cover with cold water. Add salt and bring to a boil.
- 2 Prepare syrup by boiling 1 pint sugar with 3 pints water.
- 3 Drain fruit and add to the boiling syrup. Simmer slowly for 1 hour.
- 4 Remove fruit. Continue simmering syrup until it thickens to desired consistency.
- 5 Return fruit to syrup. Place kettle in a pot of boiling water and boil until syrup is thick.
