Kidney Bean Stew Over Brown Rice

Ingredients

  • cooking oil spray, as needed
  • 1 medium onion, peeled and chopped
  • 1 medium green bell pepper, washed, seeded and chopped
  • 2 teaspoons garlic powder
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cans (15.5 oz each) kidney beans, drained and rinsed
  • cooked brown rice

Method

  1. 1 Spray a skillet with cooking oil spray.
  2. 2 Cook onion and pepper over medium heat for 5 minutes or until tender.
  3. 3 Add garlic powder, tomatoes, and kidney beans to the skillet.
  4. 4 Bring the mixture to a boil.
  5. 5 Reduce heat to low and simmer for 5 minutes.
  6. 6 Serve the bean mixture over cooked brown rice.
