Kale Tuna Salad With Balsamic Tomatoes

Ingredients

  • 2 cans tuna (5 ounce cans)
  • 1 bunch kale (or 1 bag)
  • 2 ounces cherry tomatoes
  • 1 lemon, raw
  • 1/4 cup extra virgin olive oil
  • 1/8 cup balsamic vinegar
  • kosher salt (to taste)
  • freshly ground pepper (to taste)

Method

  1. 1 Wash kale and set aside to drain. Cut tomatoes in half and toss in a bowl with balsamic vinegar, olive oil, and a pinch of salt and pepper. Set aside.
  2. 2 In a salad bowl, mix tuna and its juice with the squeeze of half a lemon and a pinch of pepper.
  3. 3 Massage kale for about 3 minutes to soften it. Add the kale and half the tomatoes to the tuna and gently toss until coated.
  4. 4 Add remaining tomatoes. Squeeze remaining lemon over the salad and serve.
