Kale Salad With Yogurt Lime Dressing
Ingredients
- 1 bunch kale
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 1 lime, zested and juiced
- 1 cup plain low-fat Greek yogurt
- 1/2 cup cilantro, chopped or torn
- 1/2 cup pumpkin seeds, toasted
- 1 jalapeño chile pepper, seeds removed and diced (optional)
- Salt and pepper, to taste
Method
- 1 Wash and dry the kale. Remove stems and tear the leaves into bite-sized pieces.
- 2 Season kale with salt, pepper, 1 tablespoon olive oil, lemon juice, and lime juice. Massage the kale with your hands until it softens and loses resistance.
- 3 In a bowl, mix the Greek yogurt with salt, pepper, lemon zest, lime zest, and the remaining 1 tablespoon of olive oil.
- 4 Stir the chopped cilantro and diced jalapeño (if using) into the yogurt dressing.
- 5 Toss the massaged kale with the yogurt dressing. Top with toasted pumpkin seeds and serve.
