Kale, Potato, And Onion Soup
Ingredients
- 2 pounds green kale
- 1 onion
- 1 Spanish onion
- 2 potatoes
- 1 ounce butter
- 2 teaspoons sago
- 1 quart water
- 1 teaspoon salt
- 1 dozen peppercorns
- a pinch of mace
- a pinch of sweet herbs
Method
- 1 Dissolve butter in a saucepan, add sliced onions and potatoes.
- 2 Add water, salt, peppercorns, mace, and sweet herbs; boil for one hour.
- 3 Meanwhile, trim kale, boil in salted water for 10 minutes, then drain and chop finely.
- 4 Thicken the soup with sago, stirring for 10 minutes, then strain.
- 5 Return strained soup to the pan, add chopped kale, boil up, and serve.
