Jelly Stuffed Russian Crepes

Ingredients

  • 3 egg yolks
  • ½ cup milk
  • ½ cup water
  • 1 cup flour
  • salt
  • 3 egg whites
  • melted butter
  • jelly

Method

  1. 1 Beat egg yolks lightly, then mix in milk, water, flour, and a little salt until smooth.
  2. 2 Stir in egg whites beaten to stiff peaks.
  3. 3 Brush a pan with melted butter and pour in a thin layer of batter.
  4. 4 Cook until browned on both sides, flipping once.
  5. 5 Spread with jelly, fold in half, then fold again into a wedge.
  6. 6 Serve hot.
