Jelly Roll Cake With Powdered Sugar

Ingredients

  • 1 cup sugar
  • 1½ cups flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 2 eggs
  • 4 tablespoons hot water
  • Currant or other jelly

Method

  1. 1 Mix and sift dry ingredients (sugar, flour, baking powder, salt). Stir in beaten eggs, then slowly add hot water. Beat until smooth.
  2. 2 Pour batter into a large, well-greased pan. Spread very thin, no more than ¼ inch thick.
  3. 3 Bake in a moderate oven (350°F) for 8 to 10 minutes.
  4. 4 Turn out onto brown paper. Beat jelly with a fork and spread evenly over the cake.
  5. 5 Trim crusty edges with a sharp knife. Roll up while warm, lifting with the paper. Wrap in a slightly damp cloth until cool.
  6. 6 Sprinkle with powdered sugar before serving.
