Jelly Roll Cake With Powdered Sugar
Ingredients
- 1 cup sugar
- 1½ cups flour
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 2 eggs
- 4 tablespoons hot water
- Currant or other jelly
Method
- 1 Mix and sift dry ingredients (sugar, flour, baking powder, salt). Stir in beaten eggs, then slowly add hot water. Beat until smooth.
- 2 Pour batter into a large, well-greased pan. Spread very thin, no more than ¼ inch thick.
- 3 Bake in a moderate oven (350°F) for 8 to 10 minutes.
- 4 Turn out onto brown paper. Beat jelly with a fork and spread evenly over the cake.
- 5 Trim crusty edges with a sharp knife. Roll up while warm, lifting with the paper. Wrap in a slightly damp cloth until cool.
- 6 Sprinkle with powdered sugar before serving.
