Jamaican Jerk Chicken
Ingredients
- 1/2 tsp ground cinnamon
- 1 1/2 tsp ground allspice
- 1 1/2 tsp ground black pepper
- 2 tsp crushed dried hot pepper
- 1 tsp crushed oregano
- 1/3 tsp chopped hot pepper
- 1/2 tsp thyme
- 1 tsp salt
- 6 garlic cloves, finely chopped
- 1 cup onion, pureed or finely chopped
- 1/4 cup vinegar
- 3 tsp brown sugar
- 8 pieces chicken, skinless (4 drumsticks, 4 breasts)
Method
- 1 Preheat oven to 350°F.
- 2 Combine all ingredients except chicken in a large bowl. Rub the seasoning mixture over the chicken and marinate in the refrigerator for 6 hours or longer.
- 3 Space chicken evenly on a non-stick or lightly greased baking pan.
- 4 Cover with aluminum foil and bake for 40 minutes. Remove foil and continue baking for an additional 30-40 minutes until meat pulls away from the bone easily.
