Jamaican Jerk Chicken

Ingredients

  • 1/2 tsp ground cinnamon
  • 1 1/2 tsp ground allspice
  • 1 1/2 tsp ground black pepper
  • 2 tsp crushed dried hot pepper
  • 1 tsp crushed oregano
  • 1/3 tsp chopped hot pepper
  • 1/2 tsp thyme
  • 1 tsp salt
  • 6 garlic cloves, finely chopped
  • 1 cup onion, pureed or finely chopped
  • 1/4 cup vinegar
  • 3 tsp brown sugar
  • 8 pieces chicken, skinless (4 drumsticks, 4 breasts)

Method

  1. 1 Preheat oven to 350°F.
  2. 2 Combine all ingredients except chicken in a large bowl. Rub the seasoning mixture over the chicken and marinate in the refrigerator for 6 hours or longer.
  3. 3 Space chicken evenly on a non-stick or lightly greased baking pan.
  4. 4 Cover with aluminum foil and bake for 40 minutes. Remove foil and continue baking for an additional 30-40 minutes until meat pulls away from the bone easily.
