Jam Topped Bread Pudding With Meringue
Ingredients
- 2 cups milk
- 1 cup bread crumbs or broken bread
- 1 tablespoon sugar
- 2 egg yolks
- 1 egg white
- ½ teaspoon vanilla extract
- 1/8 teaspoon salt
- Jam or tart jelly for topping
- Sugar for dusting
Method
- 1 Soak bread in milk until softened, then beat until smooth.
- 2 Mix in sugar, egg yolks, vanilla, and salt until combined.
- 3 Pour mixture into a pudding dish and place in a pan of hot water.
- 4 Bake at 300°F for 15-20 minutes until custard sets but does not separate.
- 5 Top with jam, then a meringue made from the beaten egg white.
- 6 Brown meringue briefly in oven, add a piece of jelly on top, and serve.
