Jam Roll Pancakes

Ingredients

  • 1 cup flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 eggs
  • 1 tablespoon sugar
  • 2 cups milk
  • ¼ cup cream
  • Jam for spreading
  • Powdered sugar for sprinkling

Method

  1. 1 Sift together flour, baking powder, and salt.
  2. 2 Beat eggs with sugar, then add milk and cream.
  3. 3 Slowly mix wet ingredients into dry ingredients to prevent lumps; batter should be very thin.
  4. 4 Heat a slightly greased small frying pan over hot fire.
  5. 5 Pour in just enough batter to cover the bottom of the pan.
  6. 6 Cook until browned, turn, and brown the other side.
  7. 7 Spread with jam or preserves, roll up, sprinkle with powdered sugar, and serve hot.
