Jam Roll Pancakes
Ingredients
- 1 cup flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 eggs
- 1 tablespoon sugar
- 2 cups milk
- ¼ cup cream
- Jam for spreading
- Powdered sugar for sprinkling
Method
- 1 Sift together flour, baking powder, and salt.
- 2 Beat eggs with sugar, then add milk and cream.
- 3 Slowly mix wet ingredients into dry ingredients to prevent lumps; batter should be very thin.
- 4 Heat a slightly greased small frying pan over hot fire.
- 5 Pour in just enough batter to cover the bottom of the pan.
- 6 Cook until browned, turn, and brown the other side.
- 7 Spread with jam or preserves, roll up, sprinkle with powdered sugar, and serve hot.
