Italian Three Bean Soup
Ingredients
- 1 can (15 ounce) great northern beans
- 2 cans (15 ounce) red kidney beans
- 46 us fluid ounces pinto beans
- 1 can (15 ounce) tomato juice (or V-8 juice)
- 1 can (15 ounce) Italian style or stewed tomatoes (low sodium)
- 1 can (15 ounce) vegetable broth (low-sodium)
- 1 can (15 ounce) green beans (drained)
- 1 1/2 tablespoons Italian seasoning
- 1 medium onion (chopped)
- 1/4 teaspoon black pepper
- 2 garlic cloves (fresh)
Method
- 1 In a large pot, combine all ingredients.
- 2 Cover and simmer for 30 minutes.
- 3 Serve with Italian or French bread or whole-wheat rolls.
